Panaderya Salvaje, located right in the heart of Downtown Jersey City, is a bustling bakery that fuses French techniques with Filipino flavors. The husband-and-wife duo of Nicu Dalman and Mikee Uychiat brought their unique approach to pop-up activations and delivered baked goods to healthcare workers during the pandemic, generating a word-of-mouth buzz that led to them to open their own storefront that is about to celebrate its one-year anniversary. Nicu is a self-taught baker who boldly incorporates inspirations from the Visays and Mindanao regions of the Philippines, while Mikee handles front-of-house duties.
